Huila Mountain Java is a uniquely vibrant and decadent Colombian coffee crafted through a meticulous double fermentation and washed process. Grown at 5,250–6,560 feet above sea level on the steep, lush slopes of southern Huila, this rare Java varietal thrives in the region’s diverse microclimates and volcanic soils. Produced by 14 small family farms working in collaboration, the coffee reflects both tradition and innovation, bringing together depth, brightness, and layered complexity in every cup.
Flavor
The flavor profile is extremely smooth and full-bodied. At our cupping table, we tasted dark chocolate, orange, nectarine, and toffee. This coffee was double-fermented prior to drying, which serves to promote the chocolate and fruit overtones.
When brewing this coffee using the AeroPress, V60, and espresso, we found it to be exceedingly delicious and it instantly became one of our favorites. Grinding coarser brought out more of the citrus and nectarine flavors. Slowing down the extraction process by grinding finer tended to lessen the fruit flavors while enhancing the chocolate and toffee flavors. This is a special and unique coffee that is unforgettable.
